An hour
before breakfast
The longest, quietest hour of the day at the property — between the first kettle and the first guest at the kitchen door. We try to keep this hour for ourselves.
Most mornings someone is already on the path to the boathouse by six. The sauna has been heating since five — the wood for it goes in the night before — and by seven the first towels are folded on the bench by the dock.
Breakfast is set in the Forest Kitchen at seven-thirty, but the bread is taken out of the oven at six-forty and the first pour-over is ready ten minutes after that. If you walk past the kitchen window in those ten minutes, you'll see no one — just the bread on the counter, and steam.
